Josephine L. Pfeffer
July 18, 1928 – March 27, 2019
Josephine (Jo) Pfeffer passed away on March 27, 2019 at a young age of 90 years.
She retired after 29 years of Civil Service at the Strategic Air Command at Offutt Air Force Base. Jo stayed young by continuing involvement in the local Bellevue community, devoting many hours to charitable and civic activities at her favorite organizations: the Fraternal Order of Eagles Aerie 3912, Ladies’ Auxiliary, the Bellevue Women’s Club, and the Highland Park Garden Club, as well as occasionally volunteering at the Bellevue Little Theater.
Jo is survived by her four children and spouses, Thomas and Elizabeth Pfeffer
of Omaha, Kirk and Nancy Pfeffer of Council Bluffs, Carole and Louis Gasper of Lincoln, Lynne Pfeffer of Austin, Texas, seven grandchildren, and seven great-grandchildren.
Jo was preceded in death by her husband of 31 years Thomas, her mother Helen Koubek, father Frank Koubek, her three sisters Betty Koubek, Shirley Larsen, and Rose Covert, and her beloved companion Fred Schroeder.
Visitation will be held on Monday, April 1st, 5:00-7:00 p.m., at the Bellevue Memorial Chapel. The funeral service celebrating Jo’s life will be held on Tuesday, April 2nd, 10:30 a.m., at the Bellevue Memorial Chapel. In lieu of flowers, memorials are suggested to the Juvenile Diabetes Research Foundation (JDRF) or www.jdrf.org.

Jo was a wonderful friend who I had the pleasure of working with multiple times with the Eagles. Due to her years of service as state newsletter editor, she was awarded the first Nebraska State Auxiliary Recognition Award in 2004. The medal is inscribed “For Exemplary Dedication to the Nebraska State Eagles Auxiliary.” Her smiles, her devotion, and her wisdom will be sorely missed. I extend my sincere sympathy to the family, friends, and fellow Eagles who now mourn the passing of this wonderful woman. God bless you all.
